Ancient Chamori Ko'ko' Stew
Tinaktak Ko'ko'
The Taotaomo'nas of Guahan held special regard for the flightless Ko'ko' bird.
The abundance of
the animal in ancient times made it necessary to impose certain control measures and thus, the Ko'ko bird became a major food
staple in the diets of our ancestors.
Ingredients:
4 whole ko'ko' birds, chopped in fours.
2 bunch, Chamori green onions, chopped.
1
dågu, cubed.
1/2 teaspoon of lemon juice.
1 small bunch puntan kalamasa (pumpkin tips) chopped.
1 cup coconut milk.
2
cups of water.
Directions:
Cook ko'ko' meat and dågu until tender.
Add onions, puntan kalamasa (pumpkin tips),
lemon juice.
Cook at medium heat for 20-minutes.
Add coconut milk and simmer.
Add salt and black pepper to taste.
Serves
Two.
